Juicy Hawaiian Chicken with Pineapple and Vegetables

Ingredients:

4 boneless, skinless chicken breasts
2 cups fresh pineapple chunks
1 red bell pepper, sliced
1 green bell pepper, sliced
1 red onion, sliced
1 zucchini, sliced
1/4 cup soy sauce
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon sesame oil
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger
Salt and pepper to taste
2 tablespoons olive oil
Sesame seeds and chopped green onions for garnish

Directions:

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic powder, ground ginger, salt, and pepper to make the marinade.
Place the chicken breasts on the baking sheet and brush both sides with the marinade. Allow the chicken to sit for 10 minutes to soak up the flavors.
Arrange the pineapple chunks, bell peppers, onion, and zucchini around the chicken on the baking sheet. Drizzle everything with olive oil and the remaining marinade.
Bake in the preheated oven for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
Remove from the oven and garnish with sesame seeds and chopped green onions. Serve hot and enjoy!
