The name of this was “Turnip Green Soup” but, I carried this to a get-together & some people wouldn’t try it as they did not like turnip greens. I carried it to another get-together & called it “Swamp Soup” and all 5 qts. were eaten and raved over & everyone wanted the recipe! My 16 year-old grandson raves over this & he can probably eat the whole pot by himself if I would let him! This is probably the only soup I make in the summer too~it is not “heavy” & sits well with almost everyone~even people who don’t like turnip greens!
You can’t get any better than these for turnip greens in a can. I’ve always adored the collards too. You will need two of these for the full recipe. Do not drain them, just go ahead and put them in your large crockpot with all the goodness they came with.
Protein and fiber here! These are name brand. You do you, but do get two. Drain and add them into your large crockpot.
Drain and dump! Two of these if you please.
One of these drained and into the crockpot we go!
Ok, if you love a little more heat than I do then you need one of these drained and dumped into the crockpot. If you have a baby mouth like me that can’t take the heat, then use two of the mild Rotel cans instead and leave this hottie on the shelf. Your stew will still have a little heat to it without this. You do you on this one.
Ingredients For Swamp Soup
1 mdonion
1 lbpolish kielbasa
1 canturnip greens
1 pkgdry knorr vegetable soup mix
1 cangreat northern beans
1 cannavy beans
1 boxlow sodium chicken broth
1 tsptabasco sauce
1 tspgarlic powder
dashblack pepper, to taste
How To Make Swamp Soup
1Dice & cook onion in a non-stick 5 qt. pot until transparent and tender. (You may want to dice a clove of garlic and add here instead of the garlic powder)
2Slice the polish kielbasa & cut into quarters and brown/cook in with the onions, stirring occasionally for 5 mins. or so.
3Add rest of ingredients, stir, and bring to a boil, then reduce heat to simmer and cook until heated through and the green peas in the dry Knorr soup mix are cooked through. (Just taste one every few minutes to tell).
4Great with cornbread & you can add more chicken stock, if desired~also, you can add more beans as I do when we eat it the next day! This is also just as good or better the 2nd day! I have also added a can of pinto beans, but we like the navy & northern the best. I have also used fresh turnip greens, but canned is just as good and you can add a can of mixed greens or collards or just about anything & this is still GREAT soup!
5**** Please note: Do NOT add salt to this as the dry soup mix has enough salt in it already & you may oversalt it, also the beans/turnip greens/etc. are usually already salted. Substituting turkey or chicken sausage works great with this too.
*I always double this recipe and make additions too!
