Ingredients

8 slices of rye bread
1 pound (about 450g) thinly sliced corned beef
1/2 pound (about 225g) Swiss cheese, thinly sliced
1 cup sauerkraut, drained
1/2 cup Russian dressing (recipe below)
Butter, softened
Russian Dressing:
1/2 cup mayonnaise
2 tablespoons ketchup
2 tablespoons sweet pickle relish
1 teaspoon Worcestershire sauce
Salt and pepper to taste

Instructions

Russian Dressing:
In a small bowl, mix mayonnaise, ketchup, sweet pickle relish, and Worcestershire sauce.
Season with salt and pepper to taste.
Refrigerate until ready to use.
Reuben Sandwich:
Preheat a griddle or large skillet over medium heat.
Lay out 8 slices of rye bread. On 4 slices, evenly distribute the corned beef.
Top the corned beef with Swiss cheese, followed by sauerkraut.
Spread Russian dressing on the remaining 4 slices of rye bread and place them dressing side down on top of the sauerkraut.
Butter the outsides of the sandwiches.
Place the sandwiches on the preheated griddle or skillet. Cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Once cooked, remove the sandwiches from the griddle and let them rest for a minute before slicing.
